Creamy Chimichurri Sauce over Tofu and Vegetables

Perfect for your Memorial Day grill out! Make and share this delicious creamy chimichurri no matter what comes off the grill!

I'll be making tofu and vegetables and can't wait to dig in!

Ingredients

Setup

For the chimichurri

  • 3-5 garlic cloves (you choose the intensity)
  • 2 cups cilantro
  • 1 1/2 cups parsley
  • 1/4 cup fresh oregano (or 1 tablespoon dried)
  • heavy pinch of salt
  • 2 tablespoons red wine vinegar
  • juice of 1/2 lime
  • 1/2 pinch of cayenne or 1 pinch of red pepper flakes
  • 1/4 cup to 1/2 cup of dairy-free Greek yogurt (I like Kite Hill)

For the tofu and vegetables

  • 1 block of the firmest tofu you can find, drained and squeezed
  • 3/4 cup soy sauce, Bragg's aminos or coconut aminos
  • 1 red bell pepper, cut to large pieces
  • 1 zucchini squash, cut to large pieces
  • 1/2 cauliflower, cut to florets
  • 1/2 red onion, cut to bite sized
  • any vegetable you enjoy roasting/grilling

Directions

Chimichurri

Mince the garlic, parsley, cilantro, and fresh oregano very fine and add to a bowl. Add salt and the red wine vinegar, lime, and red pepper flakes. Whisk well. Add the yogurt one tablespoon at a time and continue to whisk until you achieve your desired consistency and flavor. More yogurt will dilute the flavors, so keep testing. Allow this to sit in the fridge for an hour and then it will really rock!

Tofu and Vegetables

Cut the tofu into about 1" cubes and add to a sealable plastic bag. Add the soy sauce to the bag and gently massage the liquid into the tofu. Squeeze as much air out of the bag as you can and seal it up! Allow to marinate for at least an hour, overnight is best. Keep this is the fridge as well and flip the bag every so often.

OVEN ROASTING

Preheat your oven to 450. Line a baking sheet with parchment paper and add the tofu and vegetables. Make sure they do not touch each other. Bake for 15 minutes and flip. Bake for another 10 minutes.

You can hit them with the broiler in the last minute or so - but watch that parchment paper if using.

I like to skewer all of these up and drizzle the creamy chimichurri sauce over it!

GRILLING

If you are grilling, the vegetables do great on the grill, but I'd still roast the tofu or even air fry it as the grill won't give you that firm outside you might be looking for.

AIR FRYING

Add tofu to a preheated air fryer at 425. Fry for 10 minutes, flip and 10 minutes more.
