Vegan Chicken Skillet Nachos with Chipotle Lime Sauce

This is nacho your typical dish! (Oh, yes, I did...)

Fool your omni friends with this one for sure! 



Vegan Chicken Skillet Nachos with Chipotle Lime Sauce

  • 1 tsp olive oil
  • ½ yellow onion, diced fine
  • 2 TBS taco seasoning
  • 1 package of Beyond Meat Chicken Free Strips, diced or shredded
  • 8 oz can of tomato sauce
  • 1 red bell pepper, diced
  • 1 15 oz can of black beans, drained and rinsed
  • 1 can diced green chiles
  • ¾ C roasted and frozen corn
  • 1 C vegan shredded cheese
  • One bunch of cilantro chopped up
  • Tortilla chips


   Chipotle Lime Sauce

  • ½ C vegan plain yogurt
  • Juice of ½ lime
  • 1 tsp lime zest
  • 1 chipotle pepper in odobo sauce
  • 3TBS chopped cilantro
  • 2 garlic cloves, minced




Blend all sauce ingredients together and place in fridge until nachos are ready.

In a large skillet, heat up the olive oil and sauté the onion until nearly translucent (about 3-4 minutes). Add in the Beyond Meat Chicken Free Strips and the seasonings. Coat well. Once the mixture is warm, add in the rest of the ingredients through the cheese. When cheese begins to melt and sauce is reduced a little, carefully scoop on to nacho chips or over a bed of greens. Top with chipotle lime sauce and cilantro.
