Adding a plant to every plate is my mantra and that equates to more fiber. But how much for really excellent health? I say 40 - and so do my mentors and those who I have so steadfastly learned from. But, don't do it once! A stair step approach is all you need and you can do it inside of one month. Every Tuesday in January, we are upping our fiber intake by 10 grams each week. By the end of the month you will be lighter, have a much better gut flora and have a more enhanced immune system. It's simple, I promise.

The plant-based diet, or simply the desire to add more plants to our plates is here to stay. There is so much evidence supporting the health benefits of this way of eating, not to mention, every time you turn around someone else has reversed their type II diabetes, lowered their cholesterol, stopped taking many of the meds they've been on for years, etc. In my family we celebrate Christmas and Christmas Dinner is one of my favorite meals of the year. The craziness of the holiday is winding down, we’re in comfy clothes and we EAT! I can remember my first (few) Christmas Dinners and here are 3 things I highly recommend when when preparing for a (holiday) dinner party:

Whoever thought that such a beautiful plant could smell so badly, yet do a darn good job of supporting good health? In fact, this garlic plant is a member of the genus Allium in the lilly family. Garlic, as are onions, shallots, chives and leeks, are all members of this family and because of their, um, fragrance, are dubbed as stinking lilies. Allicin is one of the active chemicals found in plants of the Allium family. Garlic is by far the most concentrated source of this valuable nutrient, with lesser quantities found in onions, leeks, chives, and shallots.

Holiday vegan roasts are becoming increasingly popular and many food companies are making them, but with some questionable ingredients, why not just make your own?
