They Won't Believe This Mousse Has Tofu

Chocolate fix CRUSHED with my favorite fancy-not-fancy Chocolate Tofu Mousse.

Tuesday night or gourmet dinner party, it works.

Ingredients

Setup

  • 1 -12 oz silken tofu
  • 4 oz high-quality vegan dark chocolate (70% cocoa or higher)
  • 3-4 tablespoons maple syrup or date syrup, adjust to taste
  • 1 teaspoon vanilla paste
  • A pinch of sea salt
  • 2 tablespoons unsweetened cocoa powder, for a deeper chocolate flavor
  • Optional for serving: vegan whipped cream, fresh berries, mint leaves, or cacao nibs

Directions

Break the dark chocolate into small pieces and melt it gently. You can do this in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 30-second increments, stirring between each one until smooth.

Let it cool slightly.

In a blender or food processor, combine the drained silken tofu, melted chocolate, maple syrup or date syrup, vanilla paste, sea salt, and cocoa powder. Blend until the mixture is completely smooth and creamy.

Taste and adjust the sweetness if necessary. Once chilled and set, serve the mousse with a dollop of vegan whipped cream, fresh berries, a sprinkle of cacao nibs, or mint leaves for garnish.

Note:

I used to make this with only high quality cocoa powder and then one day added the chocolate because I was tired of looking at it in my freezer and OMG, it's revved it up even more. Of course it did; it's chocolate..
