Hearty Walnut and Avocado Salad
Looking for a light, yet, hearty salad, that actually delivered on helping you get iron? Full of that micronutrient and flavor (as always), your bod will love this one!
Ingredients
Setup
2 ripe avocados, diced
1 ½ cups cooked white beans
1 cup walnuts, roughly chopped
3 cups mixed salad greens (like spinach, kale, and arugula)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 red bell pepper, diced
1/4 cup red onion, thinly sliced
Juice of 1 lemon
Salt and pepper, to taste
3 tablespoons pepitas
Directions
In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion. Add the diced avocados and chopped walnuts to the salad.
Drizzle the salad with fresh lemon juice. Toss gently to combine. The lemon juice not only adds flavor but also helps to keep the avocado from browning.
Season with salt and pepper to taste. Serve immediately, or let it sit for a few minutes to allow the flavors to meld together.
