Quinoa Chickpea and Avocado Salad
Collagen supplements seem to be all the rage right now and did you know that you can get the same (actually, even better) results in helping to smooth out those wrinkles and re-create that supple skin by what is on the end of your fork?? The amino acids in this salad help support collagen production in a super delicious way.
Ingredients
Setup
- 1 cup cooked quinoa
- 1 can chickpeas, drained and rinsed
- 1/2 cup cooked edamame
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lemon
- 1/4 cup balsamic vinegar
- Salt and pepper to taste
Directions
In a large mixing bowl, combine cooked quinoa, chickpeas, edamame, diced avocado, cherry tomatoes, red onion, and cilantro. In a separate small bowl, whisk together lemon juice, balsamic vinegar, salt, and pepper to make the dressing.
Pour the dressing over the quinoa salad and toss gently to coat all the ingredients. Let the salad sit for 10-15 minutes to allow the flavors to meld together.
Serve the salad as a main dish.
