Trader Joe's Cowboy Caviar

The best way to stay on track is to set yourself up for success. During the summer I like to keep light, but yet filling ready-to-eat foods in the fridge. Usually it's cut fruit, my Clean Slate Hummus, and any variations of Cowboy Caviar!

I was at Trader Joe's today and hauled some serious bags full of WFPB ingredients to keep me going. I came home and created this new version of CC, and boy it's DELICIOUS! Let it sit for an hour or so in the fridge and we've got 37 grams of tasty fiber fabulousness. Take this to your next BBQ or pool party and you're only bringing home an empty dish!

Ingredients

Setup

  •  1 1/2 cups corn
  • 1 1/2 cups cooked black beans (1 can drained and rinsed)
  • 1 red, orange or yellow bell pepper, chopped small
  • 1 medium ripe avocado, cubed small
  • 1/2 bunch of cilantro (leaves only), chopped small
  • 4-5 large basil leaves, chopped small
  • 2 limes, juiced
  • 2 teaspoons of ground cumin
  • pinch of salt (optional)

 

 

Directions

To a large class container with a sealable lid, add the:

  • corn
  • beans
  • bell pepper
  • avocado
  • cilantro
  • basil

To a small bowl, add the lime juice, cumin and salt (if using) and whisk well. Pour over the caviar, close the lid and shake. Enjoy immediately, but it'll be better after an hour in the fridge. I keep it in a sealed bowl to easily shake and serve.
