Oat-based Creamy Italian Dressing

Thickened by oats, this creamy Italian dressing offers fiber, not fat, to your next big bed of greens!

 

Ingredients

Setup

  • 1 cup water
  • 3 tablespoons of oats
  • 3/4 tablespoon of your favorite Italian seasoning blend (I like this one.)
  • 1 tablespoon liquid sweetener (date paste, coconut nectar, maple syrup)
  • 3/4 teaspoon light or yellow miso
  • 3/4 teaspoon coconut aminos (or low sodium soy sauce, Bragg's aminnos or tamari)
  • 1/2 teaspoon yellow mustard
  • 1/4 teaspoon garlic granules
  • 1/4 teaspoon onion granules
  • 1 tablespoon nutritional yeast - optional

 

Directions

To a blender, blend all ingredients until there are no clumps from the oats. Taste and adjust as needed.

Allow to chill in fridge and it will thicken slightly.

Will keep 3-4 days in a sealed container.

Makes 1 cup.
